The Estates

Our
domestic Estate of 14 hectares
is
situated in the centre of the
village. We work vineyards and convert into wine wines since several
generations. Fontenay-près-Chablis is a municipality
situated in
some kilometres
from Chablis. The Grands Crus as well as the 1er Cru
“Fourchaume” are situated at
the middle road between Fontenay-près-Chablis and Chablis.
It is
in this
municipality that the Estate VRIGNAUD works, converts into wine its
wines.

Viticulture
We try hard
to work vineyards strictly so that the plots
of land produce
only of modest yields, what increases the concentration in sugar and
the
material in the wine. These vineyards give us, the years when they are
generous, approximately fifty hectolitres of wine by hectare.
For it we
cut every vine differently by limiting buds
among fourteen,
this pruning is called "Double Guyot". We limit the contributions of
fertilizing;
the vineyard manages itself to provide itself in nutriments thanks to
its
leaves which bring some humus and a microbial life in the soil.
Our
vineyards arise from
the grape variety Chardonnay. We use rootstocks
such as the 41B and 161.49 which support a rate of important active
limestone.
This active limestone superior to the average is due originally
geologic of the
vineyard of Chablis and confers on wines their typical and mineral
character.
Our vineyards are worked with
passion in the respect for the nature. We practise the integrated
farming by
introducing, in our practices of farming, organic techniques. We limit
the
interventions and choose products the best adapted to the man, to the
vineyard
and to the environment

Chablis
1er
Cru "FOURCHAUME"

All the
vineyards in the 1er Cru
“Fourchaume”
is implanted on a type of ground resulting from alternations of marls
and
clayey lime stones of the kimmeridgien of origin Upper Jurassic.
The 1er Cru
“Fourchaume” is
situated right bank of the Serein, in
continuation of Grands Crus. Its southeast directed hillsides give an
exceptional maturity to the grapes which concentrate in sugar during
August
until the grape harvests at the end of September.
Our Estate
counts 5,90
hectares
of the 1er Cru “Fourchaume” in several plots of
land.
This wine with its typical
taste of flint, explained often by the term of minerality, reveals all
the
aspects of the chardonnay grape variety. Dry wine with floral smells
and
touches of under wood in the ageing, which are given to him by the soil
and
style of vinification. |

Vinification
 |
Its
pressuring was made with a
pneumatic juicer which facilitates the de-stemming.
The "alcoholic fermentation" transforms the sugar into alcohol and
takes place during 5 up to 12 days.
The
temperatures of this
fermentation are
important because they give to wines their typicity. They oscillate
between 18
and 23 °C.
Its ageing on lees increases
its minerality by giving him roundness and fat. Its vinification is
traditional,
in stainless steel vats thermo regulated. |

This 1er
Cru "Fourchaume" so
distinguishes itself:
- Appearance:
it is a brilliant, yellow wine or yellow
flecked with green.
- “Nose”
or Bouquet: it has mineral aromatic
nuances "flint" but also floral, with smells of good vegetables,
bark, undergrowth and a note of rosemary or spices.
- Examination:
this wine has a frank complex attack with aromas of citrus fruits and
fruits
blackberry, the end of round mouth and obstinacy. It is a harmonious
and
well-balanced, fine and elegant wine.
