CHABLIS

DOMAINE de CHAUDE ECUELLE - (Chemilly-sur-Serein) - Petit Chablis, Chablis.

The Domaine de Chaude Ecuelle (meaning "hot bowl") owes its name to the tradition of vineyard workers warming up their meals in terracotta bowls out in the vineyards. This became tradition because many of the Estate's vineyard plots were located at a distance from the winery itself, as is often the case in Burgundy.

The pursuit of quality remains, more than ever, the first priority of the Vilain family. Respecting the environment while carrying out traditional vineyard management and winemaking techniques are essential elements enabling the estate to produce wines which fully reflect the Chablis terroir.

Our vineyards are located in Chablis, about 200 kilometres south of Paris. Made only from the Chardonnay grape and grown on outstanding soil, Chablis is enjoyed throughout the world for its delicacy and its wide range of flavours. Fossils, including small oysters, are frequently found in the soil of Chablis which confirms the presence of salt water millions of years ago. This probably explains the mineral and slightly salty characteristics of the wines. More details ...
